I don’t know why, but I’m on a major beet kick right now!! I’m loving them as a side dish, thrown into a salad, and now they’re making a pretty regular appearance in my smoothies!
Beets are packed with essential vitamins, minerals, and antioxidants! Studies have shown that they improve circulation and lower blood pressure, and support detoxification and liver function.
I personally love roasting them in the oven before dicing and freezing them for smoothies, but they can also be consumed raw if you want to skip a step!
For extra antioxidants, fibre, and gorgeous colour, raspberries were the obvious choice! I also love the flavour of ginger with beets, so I threw some in there as well! I find it balances out the sweetness of the other ingredients really well, plus it aids in digestion and has immune boosting properties. Win-win!
Give it a boost!
To make a smoothie a complete meal, you’ve GOT to boost it with protein. Here I used a marine collagen peptide from North Coast Naturals. We lose collagen as we age, so supplementing with collagen powder can be super beneficial for your hair, skin, nails, joints, and gut health! Collagen is an incomplete protein because it doesn’t contain the amino acid tryptophan, but I love this collagen from North Coast Naturals because they add tryptophan to their collagen powders, making it a complete protein! Of course, you can easily swap this for your protein supplement of choice.
For me, no smoothie is complete without a dose of healthy fat! MCT’s (medium-chain triglycerides) are easy to digest and are absorbed quickly, so they turn into energy you can use. The Boosted MCT powder from North Coast Naturals (vanilla flavour) adds a nice creaminess and a touch of sweetness (from stevia) to balance out this smoothie. It’s also quite lovely as a coffee creamer, FYI!
Do you love beets as much as I do? Let me know in the comments and check out my Cauliflower & Beet Hummus recipe!
